The spookiest time of year is well underway, so it’s time to celebrate all things sinister, scary and spine-chilling! Halloween presents a variety of opportunities to get the family together to enjoy some frightfully good fun – whether that’s decorating the house, watching scary films, or coming together to cook up some tasty Halloween themed treats.
For most of us, toffee apples are a Halloween staple, and it’s easy to see why. They’re sweet, delicious, and require a little bit of kitchen witchcraft to get them right. So, here’s how you can make some of these killer treats at home!
To start, push the sharpest end of each lolly stick into the end of each apple (make sure it’s firmly wedged in, you don’t want it falling out!). If you’re doing this with young children, we’d definitely advise careful supervision. Next, cover a large chopping board with an equally large sheet of baking paper.
From here, tip all the sugar into a large saucepan along with all the lemon juice and 100ml water. Turn on the hob, and bring the sugary mix to a simmer, and cook it until the sugar has completely dissolved. You can swirl the pan gently to move the sugar around, but don’t stir it, as you want to avoid getting the mixture on any of your utensils.
Once the sugar has dissolved, pour in the golden syrup and bubble the mixture until it hardens, or reaches 150C on a sugar thermometer – this is your toffee. If you don’t have a thermometer, you can test if the toffee is ready by dropping a small amount of cold water onto it. If it hardens instantly, and it’s brittle when you try to remove it, you’re on for a winner. However, if it’s soft, continue to boil it on a low temperature.
Once the toffee is ready, tip in a few drops of food colouring and mix it and turn the heat off.

You’ll need to be quick for this last bit – dip each apple into the toffee, tipping the pan to cover the whole apple. Lift it out of the pan and let any excess toffee drip off before placing it on the baking paper. Repeat this step with all the remaining apples, gently heating the toffee again if you need to keep it supple.
That’s all it takes! These tasty treats are best enjoyed on the same day, so if you’re looking for something fun to do as a pre-trick-or-treat activity, making toffee apples is definitely a great option.
